The proofing spiral installed inside a cell suitable to withstand temperatures and high humidity. In fact, these are the right conditions to promote the delicate leavening process.

Cooling spiral

The cooling characteristics depend on the products to be treated or the temperature to be reached. It can work both in a special environment consisting of a cell associated with a refrigeration system, or associated with air treatment or water shower.

Freezing spiral

The freezing spiral works inside a suitably insulated cell. Appropriate evaporators and a adequate ventilation unit to ensure a correct air flow by homogeneously covering the product freezing it in a short time.

Drying spiral

Excellent for drying or toasting bread and pasta.
